Loaded fries

This recipe is vegetarian yet still delicious and contains protein from the kidney beans. This flavourful meal is a fertility friendly option that ensures you are still getting a balanced meal in!

Serves 3

Ingredients:

⦁ 1/2 red onion, diced

⦁ 1 tin of kidney beans, drained and rinsed

⦁ 3 cup mushrooms, diced

⦁ 1/3 capsicum, diced

⦁ Handful of spinach, chopped

⦁ Small tin of corn kernals, drained and rinsed

⦁ 1 tomato, diced

⦁ 1 C grated cheese

⦁ 2 Tbsp sweet chilli sauce

⦁ 1 tsp each of paprika, cumin, oregano

⦁ 1 tsp olive oil

⦁ Sour cream

⦁ Avocado, depipped and mashed

Chips:

⦁ 3 potatoes

⦁ Olive oil

⦁ 2 tsp salt

⦁ 2 tsp dried oregano


Method:

1. Cut potatoes into fries and put in a bowl of water to soak for 10-20 minutes.

2. Preheat oven to 200 degrees celsius.

3. Drain potatoes and pat dry with paper towel. Drizzle oil over the top, add salt and paprika, and mix until coated.

4. Place on an oven tray and cook for 30-35 minutes until golden and crispy.

5. Heat pan to medium-high heat, add olive oil and red onion. Cook for 3 minutes until starting to soften.

6. Add kidney beans and cook for another 3 minutes.

7. Add capsicum, mushrooms, corn, tomato, sweet chilli sauce, herbs and spices. Cook for 8-10 minutes, stirring regularly, until veg start to cook down.

8. Turn heat down. Add a handful of spinach and let wilt slightly.

9. Add cheese and stir till melted through. Remove from heat.

10. Remove chips from oven and divide amongst three bowls. Top with a third of bean mixture, a dollop of sour cream, and avocado.
